Elettaria cardamomum, the beloved green cardamom, is an intensely aromatic spice known for its complex and delightful flavor. Cardamom is part of the Zingiberaceae family, related to ginger, and is one of the world’s most prized spices, following only saffron and vanilla in cost. The cultivation of cardamom is highly labor-intensive, with plants grown primarily in Guatemala and India. The tall plants flower for eight to nine months, and the ripening process for each pod is slow and meticulous. Each pod is plucked when it is three-quarters ripe, and after harvest, they are washed and dried using specific techniques to preserve their aroma.
