Tarragon (Artemisia dracunculus)

Artemisia dracunculus is a perennial herb from the Asteraceae family, prized for its sweet, anise-like flavor. Known for its aromatic qualities, tarragon is widely used in culinary applications, particularly in egg dishes, sauces, and marinades. The leaves can be macerated in oils and vinegars or added to salad dressings for a herbaceous, slightly licorice-like taste.

Traditional & Culinary Uses

The name dracunculus, meaning “little dragon”, originates from medieval herbalists’ belief in the Doctrine of Signatures, which suggested that plants resembled their healing purposes. Due to its serpentine-shaped roots, tarragon was once thought to be a remedy for snakebites.

While its medicinal use is now limited, fresh tarragon leaves and stems remain a staple in cooking. The herb is highly aromatic and readily infuses flavors into vinegars, oils, and meats. It is particularly valued in French cuisine, where it enhances the taste of poultry, seafood, and vegetable dishes. Dried tarragon is sometimes used as a seasoning, but fresh leaves offer the most robust flavor.

Beyond the kitchen, tarragon can serve as a natural pest deterrent, as many insects dislike its distinctive scent. Gardeners often plant it alongside other crops to help repel pests naturally.
