Sassafras albidum is a deciduous tree native to eastern North America, known for its uniquely shaped leaves and rich aromatic qualities. Traditionally used by indigenous peoples, sassafras leaves became a staple in Creole and Cajun cuisine, most notably as a key ingredient in gumbo. The finely ground leaves, known as filé (FEE-lay), serve as a seasoning and thickening agent in soups and stews, bringing a distinctive earthy flavor to regional dishes.

Beyond its culinary uses, sassafras leaf has a history of being enjoyed as a warming herbal tea. The leaves infuse beautifully in hot water, offering a fragrant and soothing beverage. Additionally, sassafras leaf can be used in topical applications.
